Our Salami Cotti

This modern product comes from an original and traditional recipe that has been adapted and improved by the Quadro craftsmen.
This was accomplished using the best cuts of pork from pigs that are born, raised, fed as well as butchered in Italy.
“Salame Cotto” is made from the highest quality pork, and is a meat created through mixing lard, bacon, spices and then adding a great sicilian wine with a very special taste called Marsala. The minced meat that fills the casing of pig intestine has to be cooked in hot water at 90 degrees for several hours.
